4What the spec sheet can't tell you

On paper they almost rhyme: both very hard, both around the same carbon content, both hold an edge for a 6/10. In the hand they are strangers. Aogami Super has that carbon-steel liveliness — it feels eager off the stones and sings through produce. SG2 feels composed and slightly glassy; it just keeps working, day after day, without asking anything of you.

5The rust question, answered straight

Aogami Super has 0.3-0.5% chromium. Stainless needs roughly 12% and up; SG2 carries ~14-15%. There is no clever grind or coating that changes this chemistry: leave an Aogami Super blade wet overnight and you will find orange spots by morning. If that sentence made you wince, buy the SG2 and be happy — an honest shop tells you that before the sale, not after.

6Patina is not rust

Cared-for carbon steel doesn't stay shiny — it earns a patina: a stable blue-grey film that actually slows further reaction. The ritual is smaller than the internet makes it sound. Wipe the blade dry between tasks, wash and dry properly at the end, and the steel looks after itself. What it will not forgive is soaking in the sink or drip-drying in the rack.

7The cladding loophole — James's steer

Here is the detail most comparison pages miss: on a traditional clad knife, the first rust almost never starts on the hardened core — it starts on the soft iron cladding (the jigane) wrapping it. Which opens a loophole: Aogami Super with STAINLESS cladding. Only the few millimetres of exposed core at the edge are reactive; the rest of the blade shrugs off water like an SG2. We originally called this a tie. It isn't — and the correction is worth understanding. Edge retention is driven by hard carbide volume, and SG2 carries ~13% of it (chromium and vanadium, CATRA-measured at 6/10). Aogami Super's headline carbon mostly forms cementite, which barely cuts; its truly hard tungsten and vanadium carbides amount to ~4-6%, landing it at 5/10. Larrin Thomas puts it bluntly: SG2 "cuts far better than the blue super." At equal hardness that is roughly 20-40% more cutting between touch-ups. A 65 HRC Aogami Super narrows the gap — which brings us to the question nobody asks: whose Aogami Super?

10Whose Aogami Super? Heat treatment is half the steel

SG2 blades are remarkably consistent from brand to brand — powder stainless is demanding to harden, so it is commonly sent to specialist heat-treatment houses and comes back at 62-64 HRC almost regardless of whose name is on the blade. Aogami Super is the opposite: the smith's philosophy IS the product. Sukenari in Toyama water-quenches it to around 65 HRC — a brutal, high-failure-rate process they refuse to soften — and the result is a crisper, harder edge that genuinely narrows the retention gap. Echizen smiths mostly run it nearer 62 HRC for durability, at which point, honestly, you are buying something not far from a beautifully-made Blue 2. When you choose Aogami Super, you are choosing a forge as much as a steel. (Quench details come from maker specs and community interviews, not published datasheets — we label it accordingly.)

11Sharpening day

This is where Aogami Super pays you back. It is the hardest steel of the carbon family, yet it abrades quickly and deburrs cleanly on ordinary whetstones — ten relaxed minutes and you are back to scary sharp. SG2 asks more patience: its fine PM carbides resist the stone, and it genuinely rewards diamond or hard ceramic stones. Neither is difficult; one is simply faster and more forgiving to learn on.

Toughness is the quiet win for SG2: 7/10 against 4.5/10. Aogami Super's very high carbon content raises its brittle cementite fraction, and Japanese makers grind it thin — so a twist through a pumpkin or a knuckle-strike on a bone can cost you a chip. Neither steel belongs anywhere near frozen food, but SG2 gives the heavier-handed cook a real margin.
