日立金属製の非常に人気のあるステンレス鋼です。堺の多くの刃物鍛冶が銀三鋼を使用した製品を手掛けています。実用硬度はHRC 60〜62で、銀三鋼は白二鋼のステンレス版とも言える存在だと考えています。
こちらの在庫品は三枚合わせ構造となっており、銀三鋼を芯材に柔らかいステンレス鋼で挟み込んだ3層構造です。この構造により、熱処理後の研ぎが容易になるほか、刃を薄くする際にも機械ではなく砥石で作業が可能です（機械での調整は実用的ではなく、これが私が粉末ハイス鋼のモノステール包丁をあまり好まない理由の一つでもあります）。
