正本·総本店の白二鋼本霞：多くの方に愛されるKSシリーズです。このシリーズは正本の中で最も人気が高く、日立金属の白二鋼を軟鉄で挟み込んで鍛造されています。炭素のみを添加した白紙鋼は最も純度の高い鋼材であり、極めて鋭い切れ味を実現しながらも研ぎやすさに優れています。KSシリーズはKKシリーズと比較して、より精緻な仕上げと優れたフィット感を備えています。
日本包丁界の王者とも称される正本·総本店が、Knives and Stonesに登場しました。1872年に松沢巳之助によって創業され、1891年に平野吉蔵が継承した正本·総本店は、現在6代目の平野正浩が経営を担っています。約150年の歴史を持つ正本·総本店は、日本のほぼすべての料理人に、国内最高峰の包丁ブランドとして認められています。
