    三枚合わせ(Sanmai)は両刃包丁に一般的な構造で、硬い芯鋼の両側に柔らかい地金を鍛接したものです。熱処理後、硬く脆い芯鋼が鋭い刃先を形成し、柔らかい地金が芯鋼を支えて刃全体の強度を高めます。

    ダマスカス三枚合わせは、地金にダマスカス鋼を使用した構造で、刃に装飾的な美しさを加えます。ステンレス芯鋼の包丁の場合、ダマスカス地金もステンレスとなるため、炭素鋼やセミステンレスの芯鋼を錆や変色から保護する役割も果たします。

    柔らかい地金は、本焼やモノスティール構造に比べて薄く削る工程を容易にします。ただし、地金がダマスカスの場合、エッチング・研磨・鏡面仕上げに関わらず、削りの過程で地金の模様が変化し、新品時の状態とは異なる見た目になります。

    エッチング工程は、まず包丁を徹底的に洗浄し、油分や残留物を取り除くことから始まります。エッチングしない部分には保護マスクが施される場合があります。その後、刃体を塩化第二鉄などの酸性溶液に浸すと、鋼の層ごとに異なる速度で化学反応が起こります。これにより刃の表面に暗色の酸化皮膜が形成され、鋼の反応性に応じて皮膜の厚みが変化します。エッチング後は重曹溶液で中和処理を行い、すすいで乾燥させます。最後の工程では刃を研磨してエッチング模様を際立たせ、包丁の美しさを高めるとともに、作り手の技術を引き立てます。

    どちらも日本の万能包丁であり、ほとんどのご家庭での調理において、その大半をこなすことができます。選択の決め手は、長さ、刃の形状、そして好みの切り方にあります。

    牛刀は日本におけるシェフナイフです。一般的に210mmから240mmの長さがあり、緩やかにカーブした刃線によって、刻むだけでなく揺らしながら滑らせるような切り方も可能です。長いリーチと尖った切っ先により、肉類から大きな野菜まで幅広く対応できる汎用性を備えています。

    VG10W(V金10W)は、武生特殊鋼がV金10号にタングステンを添加して調整した姉妹鋼です。両者の組成はほぼ同一ですが、VG10Wには炭素1.0%・クロム15.0%・モリブデン1.0%・バナジウム0.25%・コバルト1.55%というV金10号のベースに、さらに0.40%のタングステンが加えられています。このタングステンが硬く微細な炭化物を析出させ、耐摩耗性の向上と研ぎやすさの実現に寄与していると武生特殊鋼は説明しています。同社のブレードテスト評価では、VG10Wは耐久性・強度で20%、切削性能で25%の向上を示し、耐食性は同等を維持。焼入れ硬度もV金10号の60+に対し61+ HRCと、1ポイント高い数値を記録しています。

    VG10Wの包丁の研ぎ方とお手入れ方法

    VG10WはV金10号と同様に研ぎやすい鋼材です。タングステンが硬く微細な炭化物を析出させることで耐摩耗性を高めつつ、研ぎやすさは損ないません。砥石上では一般的なステンレス鋼と同様に振る舞い、反応が良く、気持ちよく刃付けができ、特別な砥石は不要です。

    お手入れはステンレス鋼の基本通り、数秒で済みます。クロム含有量15%のステンレス鋼であり、完全に錆びないわけではありません。使用後は洗い流して拭き上げ、しまう前にもう一度乾拭きし、乾燥した状態で保管してください。食洗機の使用は避けてください。他のハイカーボンステンレス鋼と同様、酸性の食材が付着したまま濡れた状態で放置するとシミになることがあり、湿度の高い環境や海沿いのキッチンではその可能性が高まります。切れ味が鈍ってきたらお持ちください。K&Sでは店頭で研ぎ直しと刃先の再調整を行っており、不適切な砥石で硬い刃と格闘するよりも確実です。
